3 pounds of Yukon Gold or red potatoes, peeled and cut into chunks

½ cup mayonnaise

¼ cup sour cream

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar or pickle juice

1 teaspoon sugar

1 teaspoon salt (plus more for boiling potatoes)

½ teaspoon black pepper

½ teaspoon paprika (optional for garnish)

½ cup diced celery

½ cup chopped dill pickles

¼ cup finely diced red onion

3 hard-boiled eggs, chopped

2 tablespoons fresh dill or parsley, chopped
