Instructions:
1. Sear the Roast: Season the roast with salt and pepper. Heat olive oil in a pan over medium-high heat. Sear the roast on all sides until browned (about 4-5 minutes per side). This step adds flavor.
2. Prepare the Slow Cooker: In the slow cooker, add the chopped onions, garlic, carrots, and potatoes. Place the seared roast on top of the vegetables.
