Slow Cooker Roast with Gravy

 

Ingredients:

• 3-4 lb (1.5-2 kg) chuck roast
• 1 tbsp olive oil
• Salt and pepper, to taste
• 1 onion, chopped
• 3 garlic cloves, minced
• 3 large carrots, peeled and cut into chunks
• 4 potatoes, quartered
• 2 cups beef broth
• 1 tbsp Worcestershire sauce
• 1 tsp thyme
• 1 tsp rosemary
• 2 tbsp cornstarch (for thickening gravy)
