Directions:
1. Preheat the oven to 375F 190C and lightly grease a baking dish.
2. Heat olive oil in a pan over medium heat and brown chicken breasts on both sides for 3-4 minutes per side. Remove from heat.
3. In a small bowl, mix cream cheese and ranch seasoning together until smooth.
4. Spread the cream cheese mixture over the top of each chicken breast.
5. Sprinkle shredded cheddar on top of the cream cheese layer.
6. Place chicken breasts in the prepared baking dish and bake for 25-30 minutes or until chicken is fully cooked internal temp of 165F.
7. Remove from the oven, garnish with chopped parsley, and serve hot.
