1. Preheat the Oven:
Preheat your oven to 350°F (175°C).

2. Prepare the Cake Batter:
In a large mixing bowl, combine the all-purpose flour, sugar, eggs, baking soda, vanilla extract, and a pinch of salt. Mix well until all ingredients are thoroughly combined.

3. Add Pineapple and Nuts:
Add the crushed pineapple with its juice to the batter. Stir until well incorporated. If using, fold in the chopped nuts.

4. Bake the Cake:
Pour the batter into a greased 9×13-inch baking pan. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

5. Cool the Cake:
Once baked, remove the cake from the oven and let it cool completely in the pan.

6. Prepare the Cream Cheese Frosting:
In a medium bowl, beat the softened butter and cream cheese together until smooth and creamy. Add the vanilla extract and mix until combined. Gradually add the powdered sugar, beating until the frosting is smooth and has reached your desired consistency.

7. Frost the Cake:
Once the cake is completely cool, spread the cream cheese frosting evenly over the top of the cake.

8. Optional Decoration:
If desired, sprinkle shredded coconut over the frosted cake for added flavor and decoration.

9. Serve and Enjoy:
Cut the cake into squares and serve. Enjoy your delicious Pineapple Cake with Cream Cheese Frosting!

Notes:

  • Ensure the cake is completely cool before frosting to prevent the frosting from melting.
  • Store any leftovers in the refrigerator for up to 3 days.
