Jamaican-Inspired Feast: Jerk Chicken, Rice and Peas, Cabbage, and Shrimp Scampi

3. Sautéed Cabbage

Ingredients:

  • 1 small head of green cabbage, thinly sliced
  • 1 medium onion, thinly sliced
  • 2 carrots, julienned (optional)
  • 2 garlic cloves, minced
  • 2 tbsp butter or oil
  • 1/2 cup chicken broth (or vegetable broth)
  • 1/2 tsp ground allspice
  • 1/2 tsp ground turmeric
  • Salt and black pepper to taste
  • 1 tbsp fresh thyme leaves (optional)

Instructions:

  1. Sauté Vegetables:
    Heat the butter or oil in a large skillet over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add Cabbage and Carrots:
    Stir in the sliced cabbage and carrots. Cook for 5-7 minutes, stirring occasionally, until the cabbage begins to wilt.
  3. Season and Simmer:
    Add the chicken broth, allspice, turmeric, salt, and pepper. Stir well to combine. Cover the skillet and let the cabbage simmer for 10-15 minutes, or until tender but still vibrant in color.
  4. Finish:
    Sprinkle with fresh thyme leaves (if using) before serving.
