– 3 to 4-pound beef chuck roast
– 2 tablespoons olive oil
– 2 large onions, peeled and quartered
– 4 cloves of garlic, minced
– 4 large carrots, peeled and cut into 2-inch pieces
– 4 celery stalks, cut into 2-inch pieces
– 2 cups beef broth
– 1/4 cup soy sauce
– 2 tablespoons Worcestershire sauce
– 1 tablespoon brown sugar
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– 1 teaspoon paprika
– Salt and pepper to taste
– 4 potatoes, peeled and quartered (optional)
– Fresh parsley for garnish (optional)
