I made this for dinner last night, and WOW—my whole family was obsessed! This dish is pure comfort food at its finest: a juicy meatloaf smothered in creamy mashed potatoes and topped with gooey melted cheddar cheese. It’s hearty, satisfying, and perfect for cozy family dinners.

Ingredients

For the Meatloaf:

  • 1 ½ pounds ground beef (80/20 blend works best)
  • ½ cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • ¼ cup milk
  • ¼ cup ketchup (plus extra for topping)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried Italian seasoning

For the Mashed Potatoes:

  • 2 pounds Russet or Yukon Gold potatoes, peeled and cut into chunks
  • ½ cup whole milk
  • 4 tablespoons unsalted butter
  • ¼ cup sour cream
