Ingredients
- 1 pound of dried white beans (such as cannellini or great northern beans), soaked overnight
- 3 medium-sized potatoes, peeled and diced
- 2 medium carrots, diced
- 1 onion, chopped
- 2 celery stalks, diced
- 2 cloves of garlic, minced
- 2 cups of cooked ham, cubed or shredded
- 6 cups of chicken or vegetable broth
- 2-3 sprigs of fresh thyme
- 1 bay leaf
- Salt and pepper to taste
- Olive oil for sautéing
